Choose your jar
Next time you finish a jar of gherkins or olives, rinse it out and keep it for making salad dressing – it’s the perfect vehicle for both making and storing. Remember to keep the lid!Gather your ingredients
For a basic dressing, you need oil, lemon juice, seasoning, Dijon mustard, and a clove of garlic. We like to do a mixture of olive oil and canola oil.Prepare your base
The base of the perfect dressing is 1 part vinegar (or lemon juice) to three parts oil. So, add 100ml fresh lemon juice to your glass jar followed by 300ml oil (half olive, half canola).
Add your seasonings
Crush one clove of fresh garlic into the jar, then add ¼ teaspoon Dijon mustard and a good grinding of sea salt and black pepper. If you’ve feeling adventurous, you can also add finely chopped fresh herbs at this point – marjoram, oregano, and parsley are all great options.Shake and serve
Tightly close the lid of the jar and give everything a vigorous shake – you want the oil and lemon juice to come together or ‘emulsify’ so that you’re left with a deliciously creamy and tangy dressing. Drizzle the amount you need over your salad, then pop the rest in the fridge for another night.
