Greek-style lemony potato salad
Serves 4

Ingredients:
- 1 .5 kg Woolworths Mediterranean, Red-skin or Apache potatoes boiled
- 1 x 350 g pack Woolworths Baby Cucumbers
- Olive oil, for drizzling
For the tzatziki-style dressing:
- 1 cup Woolworths Double Cream Plain Yoghurt
- 1 clove garlic
- 1 lemon, zested and juiced (or to taste)
- 10 g mint chopped
- 2 spring onions, chopped
- Sea salt and freshly ground black pepper, to taste
- 1 T olive oil
- Water, to loosen
- Fresh oregano or microherbs, to garnish
Method:
- Cook the potatoes in boiling water until tender, then drain and set aside.
- Grate half the cucumbers and drain them in a colander. Toss with a sprinkle of salt to draw out more liquid.
- Thinly slice the remaining cucumbers. Drizzle with olive oil and a squeeze of lemon juice then set aside.
- To make the dressing, blend all the ingredients until vibrant green and smooth.
- Arrange the potatoes on a plate, drizzle with the dressing and top with the cucumber and drizzle with more olive oil. Season liberally, garnish with herbs and serve.
