We made sweetcorn quesadillas on the braai!
Braaibroodjies are great, and we’ll love them forever – but sometimes you need to shake things up a bit. And these sweetcorn quesadillas have to be tasted to be believed.
Ingredients:
- 8 Woolworths White Flour Wraps
- 400 g mozzarella, grated
- 1 x 250 g tub crème fraîche
- 1 x 650 g Woolworths Sweetcorn Riblets
- 3 slicing tomatoes, sliced
- 1 red onion, sliced
- Sliced pickled jalapeños, to serve
Method:
- Remove the sweetcorn riblets from the packaging and braai until slightly charred.
- Arrange 4 of the wraps on a surface and spread crème fraîche over each wrap.
- Top with a layer of grated cheese, sliced tomatoes and jalapeños.
- Carefully cut the sweetcorn riblets kernels from the ribs and sprinkle over the wraps, along with the crispy onions from the package.
- Top with the remaining wraps and push down slightly to secure.
- Close in sandwich braai grid and braai over the coals until slightly blackened and toasty, and the cheese has melted.
- Top with pickled red onions and cut into wedges. Serve hot, with the fresh pineapple BBQ sauce from the package to dip into.
