Your new best braai menu: family edition
You’ve got chops and sweetcorn on the grill for your Sunday family braai but what about the sides? We bring you a simple but spectacular five-bean salad and the best ever garlicky bread. Time to up your braai game.
Fantastic bean salad
- In a bowl, combine 1 can three-bean mix and 1 can of butter beans, both drained and rinsed. Blanch 350 g fine green beans and slice.
- To make the dressing: Grind ½ crushed garlic clove and a pinch of sea salt in a pestle and mortar.
- Add 1 teaspoon Dijon mustard and combine. Add 1 tablespoon sherry vinegar and ¼ cup olive oil; keep grinding to mix and add 2 tablespoons honey (or to taste).
- Toss the dressing through the canned beans and red onion, along with the zest and juice of one lemon.
- Leave to let the flavours mingle for an hour or so. Just before serving, toss through crunchy green beans.
- Also add 10 g chopped parsley and 3 chopped celery stalks.
The ultimate green garlic butter bread:
- Add 100 g butter, ¼ cup olive oil, 4 garlic cloves (crushed), ¼ cup chopped fresh parsley, basil and chives, salt and black pepper to a processor.
- Blend until smooth, season to taste and melt together in a hot pan.
- Brush between the slits of baguette and grill on the braai.
- Serve with grilled lamb chops and braaied corn on the cob. Yum!
