Ingredients:

Stone fruit and berry breakfast crumble
Easy 
Serves: 4–6 
Preparation time: 15 minutes 
Cooking time: 45 minutes 

 

For the fruit:
450 g Woolworths Flavourburst™ Nectarines or Peaches 
2 T butter 
1 vanilla pod, split in half
250 g raspberries

Crumble topping:
200 g Woolworths Oats
150 g macadamia or almond flour
100 g butter
Plain yoghurt, to serve
Honey, to serve
Fresh blackberries, to serve

Method:

  1. Preheat the oven to 180°C. 
  2. To make the crumble, combine the oats, macadamia flour and butter. Using your fingertips, rub together and create a breadcrumb texture. Chill until ready to use. (This is great to prep the night before – you could even make extra, freeze it and use from frozen in the next round).
  3. Slice the stone fruit into thin wedges and add to an oven proof pan with butter. Toss to coat for 5 minutes, add the vanilla and raspberries and remove from the heat. 
  4. Sprinkle over your chilled crumble and bake for 35–40 minutes until golden and bubbling. Serve warm with yoghurt, fresh blackberries and a drizzle of honey.
