Quick & easy seafood pasta

Ingredients:
- 1 packet of Woolworths Frozen Mussels with garlic & herb butter
- Fresh hake fillet
- 1 x cube of Woolworths prepared garlic and chilli
- 2 T olive oil
- 2 x 400 g cans Woolworths Smoky Chipotle & Tomato Soup
- 350g – 500 g pappardelle pasta, cooked
- Cream, to serve
- Sea salt and freshly ground black pepper, to season
- Finely chopped parsley, to garnish
Method:
- Start by steaming the mussels: add half of the butter to a large shallow pan that has a lid and pour out the frozen, half-shelled mussels. Cover with the lid and leave to simmer according to package instructions, stirring every now and then. Remove the mussels and keep aside.
- Add the remaining garlic butter from the box and fry cubes of fresh hake fillet, add a drizzle of olive oil and a sprinkle of smoked paprika, fry until cooked through.
- Remove the hake from the pan when cooked and set aside. Pour the pan juices over the fish.
- Fry the chilli and garlic in the olive oil in the same large pan to keep all of those delicious flavours.
- Add the cans of chipotle & tomato soup (or regular canned tomato soup) and simmer for 5 minutes; stir in a dash of cream and season.
- Fold the hot cooked pasta to coat in the sauce. Serve hot with mussels and spiced fish. Eat while warm.
