Kitchen Craft Episode 23: Homemade peanut butter

It’s actually astonishing how easy it is to make your own peanut butter, as Chef Clem demonstrates. And as an added bonus, try his recipe for peanut butter granola balls – you’ll be sorted come snack time!

For the peanut butter:

Ingredients:

  • 1 ½ cups roasted, unsalted peanuts

Method:

  1. Add the peanuts to a blender and blend for about a minute or until the peanuts become creamy and ultra-smooth.

(Makes 1 cup of peanut butter)

*If you make a large batch of peanut butter you can store it in a container, or a jar with a tight-fitting lid. Keep in the fridge ready for use at any time.

For the granola balls:

Ingredients:

  • 1 cup peanut butter
  • 1 T raw cocoa powder, or good quality cocoa powder
  • 3 T honey
  • ¼ t salt
  • 4 T breakfast seed mix
  • 1 cup uncooked oats
  • 1 cup desiccated coconut, extra for coating

Method:

  1. Add the peanut butter to a mixing bowl along with the cocoa powder and honey, mix together then add the salt, seed mix, oats and coconut, mix until well combined.
  2. Using 2 spoons, shape equally sized amounts of the mixture into a rough oval shape then add to a dish with the extra coconut. Sprinkle with coconut, then begin rolling into balls, repeat the process with the remaining mixture.
  3. Place in a container fitted with a lid and keep in the fridge until ready to serve.

(Makes 12 granola balls)
