These lemony chicken strips are bursting with flavour

It’s officially citrus season. We’re happily looking for ways to use them in all kinds of delicious recipes – like these zesty chicken strips with lemony yoghurt, which make for the perfect midweek meal.

Serves 3 to 4

Ingredients:

  • 400 g Woolworths Free Range Chicken Breast Strips
  • 2 lemons, zested and juiced
  • 2 T olive oil 
  • Sea salt and freshly ground black pepper, to taste 
  • 75 g Woolworths Southern Fry Coating
  • 1–2 T canola oil, for frying 
  • Parsley, to garnish 
  • Wraps to serve

For the lemony yoghurt dip:

  • 1 lemon, zested and juiced
  • ½ cup plain yoghurt
  • 1/2 clove garlic, grated 
  • 1 T olive oil
  • Sea salt and freshly ground black pepper, to taste

Method:

  1. Marinate the chicken strips in the lemon juice and zest, olive oil and seasoning for 10 minutes while you prepare the lemon yoghurt dip. 
  2. To make the lemony yoghurt dip, combine all of the ingredients and adjust the seasoning to taste. Set aside until serving. 
  3. Shake off any excess liquid from the marinated chicken and toss in the southern fry coating according to package instructions. Fry in a shallow pan with a little oil, turning occasionally until evenly browned on all sides and cooked through. 
  4. Remove from the pan using a and spoon and drain on kitchen paper. Serve warm with yoghurt dipping sauce, wraps with salad of your choice. Garnish with parsley.
