Roasted baby veg with whipped goat’s cheese

Roasted baby veg with whipped goat’s cheese

Easy
Serves 4 
Preparation: 15 minutes 
Cooking: 25 minutes 

 

Ingredients:

  • 200 g baby carrots 
  • 250 g baby onions 
  • 200 g baby leeks 
  • 200 g baby turnips
  • 3 T olive oil 
  • Salt, to taste 
  • 2 x 100 g logs goat’s cheese
  • 3 T cream 
  • 125 g Woolworths Roasted Red Pepper Pesto

Method:

  1. Preheat the oven to 180°C.
  2. Toss the baby veg in olive oil and season to taste. 
  3. Place on a roasting tray and roast until golden brown about 15–20 minutes.
  4. Meanwhile, whip the goat’s cheese with the cream until fluffy and light using an electric mixer. Season to taste. 
  5. Serve the roast veggies with a dollop of whipped goat’s cheese, drizzled with the red pepper pesto.
