Try this warm, very sexy spring salad
Can a salad be sexy? We would argue that yes, this warm salad with spring greens and baked goat’s cheese is extremely sexy. And totally delicious.
Method:
- Preheat the oven to 180°C.
- Take a couple of goat’s milk crottin cheeses and place them on a baking tray.
- Drizzle with honey, season with fresh black pepper and bake for 10 minutes until warm and melted. In the mean time, blanch a handful of asparagus and Tenderstem™ stalks in boiling water until just tender.
- Slice lemons in half and caramelise with a little brown sugar in a non-stick pan.
- To assemble the salad, place the blanched greens on a plate – add baby spinach leaves if you want to up the salad factor – and top with pitted green olives, segments of ClemenGold™ mandarins and ruby grapefruit, caramelised lemons and baked cheese.
- Drizzle with honey and dig in.
