This one-pot pasta is a revelation
There’s a particular kind of satisfaction that comes from cooking out of a well-stocked pantry, and this recipe is a case in point – a one-pot wonder of a supper. A delicious pasta dish that comes together with almost no effort on your part, but with a lot of help from some pantry staples.
Ingredients:
- 4 Garlic cloves, sliced
- 600 G Rosa tomatoes
- 3 T olive oil
- Sea salt and freshly ground black pepper, to taste
- 350 g spaghetti
- 2 cups vegetable or chicken stock
- 375 ml jar Woolworths Tomato& Basil Pasta Sauce
- Fresh basil, for serving
- Basil pesto, for serving
- Grana padano, for serving
Method:
- Place all of the ingredients except for the basil pesto into a large saucepan.
- Break the spaghetti in half to fit in the pan. Bring to the boil and then reduce the heat to a simmer.
- Cook, stirring often, so that the pasta doesn’t stick to the bottom of the pan. Don’t be tempted to add more liquid; the stock and pasta sauce will be absorbed into the pasta. This takes about 15 minutes. Take care not to overcook the pasta, it should be al dente.
- Serve the pasta drizzled with olive oil and a generous squeeze of lemon juice. Season to taste, garnish with grated parmesan and fresh basil pesto, and serve.
