This one-pot pasta is a revelation

There’s a particular kind of satisfaction that comes from cooking out of a well-stocked pantry, and this recipe is a case in point – a one-pot wonder of a supper. A delicious pasta dish that comes together with almost no effort on your part, but with a lot of help from some pantry staples.

Ingredients:

  • 4 Garlic cloves, sliced
  • 600 G Rosa tomatoes
  • 3 T olive oil
  • Sea salt and freshly ground black pepper, to taste
  • 350 g spaghetti
  • 2 cups vegetable or chicken stock
  • 375 ml jar Woolworths Tomato& Basil Pasta Sauce
  • Fresh basil, for serving
  • Basil pesto, for serving
  • Grana padano, for serving

Method:

  1. Place all of the ingredients except for the basil pesto into a large saucepan.
  2. Break the spaghetti in half to fit in the pan. Bring to the boil and then reduce the heat to a simmer.
  3. Cook, stirring often, so that the pasta doesn’t stick to the bottom of the pan. Don’t be tempted to add more liquid; the stock and pasta sauce will be absorbed into the pasta. This takes about 15 minutes. Take care not to overcook the pasta, it should be al dente.
  4. Serve the pasta drizzled with olive oil and a generous squeeze of lemon juice. Season to taste, garnish with grated parmesan and fresh basil pesto, and serve.
