These mozzarella-filled chicken fillets are delicious
It’s no secret that we love an easy dinner, and these Easy to Cook chicken fillets (stuffed with mozzarella and spring onion!), served with blanched greens and a burnt butter sauce, fit the bill perfectly.
Mozzarella-and-spring onion cheesy chicken

Ingredients:
- 2 x 600 g packs Woolworths Easy To Cook Basted Chicken Breast Fillets topped with Mozzarella and Spring Onion
- 1 lemon, sliced
- 1 T olive oil
- 400 g Tenderstem® broccoli
- 150 g asparagus
- 100 g butter
- Sea salt and freshly ground black pepper, to taste
- Woolworths Red Salad Onions, sliced, for serving
Method:
- Preheat the oven to 180C. Remove the chicken from the packaging, arrange on a baking tray with the sliced lemon and drizzle with olive oil. Cook according to package instructions.
- Meanwhile, blanch the greens in salted boiling water for a few minutes and drain. Keep them in a bowl of iced water to prevent them from cooking further.
- Just before the chicken is ready, melt the butter in a pan over a high heat. The butter will begin to foam and darken. Remove from the heat and add a squeeze of lemon, then toss the blanched greens in the burnt butter. Serve with the chicken, warm from the oven, and sliced purple salad onions.
