3 delicious platters for summer

This summer, we’ll be doing some armchair travelling with these delicious platters. Plus, there’s a local-inspired platter, because as we all know, local is very lekker.

Middle Eastern-inspired platter

On the platter, place Moroccan mini chicken fillets, grilled & marinated artichokes and some harissa & dukkah hummus. For some tang, make a quick radish pickle by heating 1 cup red wine vinegar, 1 t castor sugar and a squeeze of lime juice (optional) in a saucepan. Add 6 sliced radishes, turn off the heat and leave aside for 10 minutes to pickle. In the meantime, add edible flowers, sliced baby cucumbers, Woolworths Tzatziki and labneh to the platter. Add the pickled radish and dig in!

Dreaming-of-the-Mediterranean platter

With influences from France, Italy, Spain and Greece

Start with a beautiful piece of cheese like creamy Lanquedoc and add sesame breadsticks, smoked trout or salmon, as well as cooked prawns (with a squeeze of lemon). Add sour cream & chive dip, shaved fennel or celery and a big scoop of feta & herb dip. Round off with cured meats like Serrano ham and salami Napoli, and finish with slices of heat & eat focaccia.

Local is lekker!

Start with boerenkaas with cumin, ripe tomatoes and some mango atchar. Ramp it up with smoked snoek terrine, dished over some nice local asparagus (get them while the season lasts!) and garnish with microherbs. Warm up some heat & eat cheese-filled frikkadels and samoosas. Add cheese straws, sliced biltong and baby gherkins for a touch of tang. Enjoy!
