MEXICAN CHICKEN SCHNITZELS
Treat your schnitzel like a tray of nachos: pile it high with sour cream, red onion and fresh coriander. A squeeze of fresh lime goes a long way here, but if you don’t have limes, lemons are also delicious with chicken schnitzels.
Ingredients:
- 1 x 700 g pack Woolworths Crumbed Free Range Chicken Schnitzels
- 125 g sour cream
- 1 red onion, finely diced
- 200 g cocktail tomatoes, sliced
- 10 g fresh coriander, chopped
- 1 lime or lemon, juiced
- Sea salt and freshly ground black pepper
Method:
- Preheat the oven to 180°C. Bake the schnitzels on a tray for 20 – 25 minutes, until golden and crunchy. Top with 1 -2 T sour cream (you can also use crème fraîche or guacamole).
- Sprinkle over the red onion and tomatoes. Garnish with coriander and squeeze over the lime or lemon.
Cook's note: Use a spoonful of Woolworths Tomato Salsa instead of fresh tomato.

CHICKEN SCHNITZELS WITH FROZEN PEAS, MINT AND FETA
This easy recipe takes about two minutes of hands-on time – perfect for these trying times! Steam frozen peas, bake the schnitzels and assemble with a crumble of feta. Pea and mint are a match made in heaven.
Ingredients:
- 1 x 700 g pack Woolworths Crumbed Free Range Chicken Schnitzels
- 250 g Woolworths Frozen Petit Pois or Peas, blanched
- 10 g fresh mint
- 150 g smooth feta
- Olive oil, to drizzle
- 1 lemon, quartered
- Dijon mustard, to serve
- Sea salt and freshly ground black pepper, to season
Method:
- Preheat the oven to 180°C. Bake the schnitzels on a tray for 20 – 25 minutes until golden and crunchy.
- Top the schnitzels with peas and feta, and sprinkle over the mint. Season and drizzle with olive oil.
- Squeeze over the lemon juice and serve with the mustard.

CHICKEN SCHNITZEL PICCATA
Inspired by veal piccata, this buttery, lemony sauce will make your chicken schnitzels feel like a restaurant meal.
Ingredients:
- 1 x700 g pack Woolworths Crumbed Free Range Chicken Schnitzels
- 70 g Woolworths Garlic-and-herb Butter
- 1 lemon, sliced
- 50 g capers
- 3-4 celery or fennel stalks, sliced
- Sea salt and freshly ground black pepper, to season
Method:
- Preheat the oven to 180°C. Bake the schnitzels on a tray for 20 – 25 minutes until golden and crunchy.
- Melt the butter in a pan. Fry the sliced lemon in the butter until caramelised. Spoon in the capers and cook for 1 minute, then add the baked schnitzels and coat in the butter mixture.
- Season to taste and serve hot with celery, green beans, asparagus or Tenderstem™ broccoli.
