Cooking Instructions
- Prepare 1 cup Jasmine rice according to pack cooking instructions.
- Cut 400 g skinless, boneless chicken breast fillets into medium-sized cubes and season with salt and white pepper.
- Dip each chicken cube into beaten egg and coat with cornflour.
- Heat 4 tablespoons vegetable oil in a wok or pan on a medium to high heat.
- Add the chicken pieces and fry for 4 minutes, or until golden-brown, crispy and cooked through. Remove from the oil and place on a kitchen towel to absorb excess oil.
- Heat the wok or medium-sized pan to medium heat with a tablespoon of vegetable oil. Add cubed red pepper, ½ yellow pepper and 1 medium brown onion. Stir-fry for 2 minutes.
- Add the crispy chicken pieces and half the bottle of Woolworths Sweet & Sour Sauce and bring to a gentle simmer.
- To serve: divide into 2 bowls and serve over Jasmine rice, garnish with fresh coriander, sliced spring onion and lime. For an extra kick of heat, add freshly chopped chilli.
