Banana and pecan muffins

Ingredients
- 4 bananas, sliced thinly or cut into rounds
- 75g melted, unsalted butter
- 2 tbsp White sugar
- 1 egg (was large now jumbo!)
- 5 ml vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 3 cups + 2 tbsp flour
- 50 g pecan nuts, broken

Cooking Instructions
- Pre-heat the oven to 180°C and line a muffin tray with paper cups.
- In a large bowl, mash the bananas with the melted butter.
- Add the eggs, vanilla extract and sugar and mix well.
- Sift in the dry ingredients and fold in. Make sure everything is incorporated well.
- Fold in the chopped pecans.
- Fill the paper cups 3/4 with the muffin batter and place a few extra pecans on top (if desired).
- Bake for 25 to 30 minutes until a skewer inserted comes out clean.
- Allow to cool for 5 minutes in the tray before removing and allowing to cool completely on a wire rack.
