Chia vanilla pudding

Serves:4-6
Prep Time:10 minutes + allow chia seeds to soak overnight

Ingredients

  • 1/2 cup chia seeds, to serve
  • 1 tsp vanilla extract
  • 500 ml almond drink
  • 2 Tbsp Wild blossom honey
  • 50 g fresh raspberries
  • whipped cream, to serve

Cooking Instructions

  1. Combine the chia sees, vanilla, almond milk and honey in a bowl and stir well.
  2. Cover with clingwrap and place in the fridge to allow the chia seeds to soak and swell overnight.
  3. When the chia seeds have absorbed all the liquid, transfer to serving dishes then top with whipped cream and fresh raspberries and serve.
