Pulled Pork & Potato Salad With Slaw

Ingredients
- Avg. 900 g 4 seasoned pork cheek steaks
- 700 g baby potatoes
- 2 red onions, 1 onion sliced and 1 onion cut in eighths
- 300 g green herb slaw
- 30 g fresh Italian parsley, 1 /2 picked and 1 /2 finely chopped
- 150 g sour cream & chive dip
- olive oil
- salt and black pepper
- 2 T red wine vinegar

Cooking Instructions
Cook the potatoes according to the packaging instructions, remove from the water and allow to cool in a bowl. In a separate bowl, place the sliced onion, 2 tablespoons of red wine vinegar and 2 tablespoons of olive oil. Season with salt and black pepper.
STEP 2
In another bowl, add the sour cream and chive dip, half of the chopped parsley, half of the pickled red onion and season with salt and black pepper. Once the potatoes are cooled, cut into quarters and combine with the sour cream mix.
STEP 3
In a separate bowl, add the slaw, the picked parsley and the remaining pickled onions, toss to dress.
STEP 4
Place a pan onto a medium-high heat and add 2 tablespoons of olive oil, add the onion eighths and sauté for 3 minutes. After 3 minutes add the pork cheeks and fry until caramelised and golden or until cooked through. Remove from the pan and pull (see chef’s tip).
STEP 5
To assemble: Place the pulled pork in a serving tray alongside the creamy potato salad and green herby slaw.
