Chipotle and soya salmon cutlets

Ingredients
- Chipotle chilli Norwegian salmon with maple and soya marinade
- 1 cup Pineapple, peeled and thinly sliced
- organic olive oil, for drizzling
- 60 g Baby leaves
- 1 red chilli, seeded and chopped
- 2 tsp lime juice
- a handful fresh coriander, finely chopped
- 1/4 cup red onion, thinly sliced
- 2 avocado, peeled and halved

Cooking Instructions
- To make the salsa, mix all the ingredients in a bowl. Season with salt and pepper and set aside.
- Preheat a grill pan.
- Brush the salmon fillets with olive oil on both sides and grill for about 2 minutes per side, until the salmon is almost cooked through.
- Serve the salmon with the pineapple salsa.
