Chipotle and soya salmon cutlets

Ingredients

  • Chipotle chilli Norwegian salmon with maple and soya marinade
  • 1 cup Pineapple, peeled and thinly sliced
  • organic olive oil, for drizzling
  • 60 g Baby leaves
  • 1 red chilli, seeded and chopped
  • 2 tsp lime juice
  • a handful fresh coriander, finely chopped
  • 1/4 cup red onion, thinly sliced
  • 2 avocado, peeled and halved

Cooking Instructions

  1. To make the salsa, mix all the ingredients in a bowl. Season with salt and pepper and set aside.
  2. Preheat a grill pan.
  3. Brush the salmon fillets with olive oil on both sides and grill for about 2 minutes per side, until the salmon is almost cooked through.
  4. Serve the salmon with the pineapple salsa.
