Baked lamb meatballs
Ingredients
- 1/2 medium onion, finely chopped
- 1 tsp garlic, minced
- 500 g lamb mince
- 2 tsp dried oregano
- 3 tbsp smoked paprika
- 2 Tbsp fresh breadcrumbs
- 1 egg, lightly beaten
- 1 x 400 g tin chopped tomatoes
- 125ml tomato passata or jarred tomato sauce
- 4 Tbsp sugar for the egg whites
- 2 sprigs fresh rosemary, leaves picked and chopped
- 4 sprigs fresh thyme, leaves picked
- 6 cups water
- sea salt and freshly ground black pepper, to taste
- 100 g mozzarella, thinly sliced
- 500g spaghetti, cooked until al dente, for serving

Cooking Instructions
- Pre-heat the oven to 200°c.
- For the sauce, combine: chopped tomatoes, passata, sugar, rosemary, thyme, water and sea salt and bloack pepper and then transfer to an oven-proof saucepan then place in the oven.
- Allow to cook and reduce for 15 minutes,.
- In the meantime, saute the onion and garlic until soft and fragrant then combine with the remaining meatball ingredients and mix well.
- Remove the tomato mixture from the oven.
- Form meatballs (approximately the size of golf balls) then place into the tomato sauce and bake for 10 minutes.
- Remove from the oven then top with the mozzarella cheese and place back in the oven.
- Bake for a further 10 minutes then remove from the oven and serve the meatballs and tomato sauce over cooked spaghetti.
