Lamb and white beans

Ingredients

  • leg of lamb
  • Ghee
  • Meat masala
  • 3 cans Butter beans
  • fresh cream
  • crushed garlic
  • 2 cans cannellini beans
  • pickled red onions

Cooking Instructions

  1. Baste a leg of lamb with a mixture of 4 T ghee and 3 T Woolworths meat masala, then roast uncovered at 170°C for 2 hours.
  2.  Heat 2 T ghee in a pan over a medium heat, then add 3 cans butter beans and fry for 5 minutes. Add ½ cup cream and cook for a further 10 minutes. Mash until the desired consistency is achieved.
  3. Heat 2 T ghee in a separate pan, then add 1 T crushed garlic and fry until golden. Add 2 cans cannellini beans and heat. Toss through 1 tub Woolworths basil pesto.
  4. Serve the lamb with the bean mash, fried beans and Woolworths pickled red onions.
