Ingredients

  • 160 g vermicelli
  • 100 g toasted flaked almonds
  • 500 ml Canola oil
  • 1,5 L milk
  • 1 cinnamon stick
  • 3 cardamom pods, cracked open
  • 50 g butter
  • 1/2 tsp rose water
  • 50 g pistachios, toasted and finely chopped
  • 1 can condensed milk
  • 70 g sago soaked in water for 30 min, then drained
  • 1/2 tsp vanilla bean paste
  • 2 T beetroot powder

Cooking Instructions

  1.  Heat butter in a large saucepan over medium heat, then add in 80g of the vermicelli, cardamom and cinnamon stick. Cook until golden brown whist continuously stirring.
  2. Add in the milk and soaked sago and simmer for 35minutes, stirring occasionally to prevent sticking and burning.
  3. Stir in the condensed milk, rose water and vanilla.
  4. To make the topping, heat oil in a pan over medium high heat, once hot, fry 80 g vermicelli in batches until puffed, drain on paper towel.
  5. Dust the puffed vermicelli in beetroot powder.
  6. Serve the Boeber warm topped with puffed vermicelli and a sprinkle of nuts.
