Ingredients
- 160 g vermicelli
- 100 g toasted flaked almonds
- 500 ml Canola oil
- 1,5 L milk
- 1 cinnamon stick
- 3 cardamom pods, cracked open
- 50 g butter
- 1/2 tsp rose water
- 50 g pistachios, toasted and finely chopped
- 1 can condensed milk
- 70 g sago soaked in water for 30 min, then drained
- 1/2 tsp vanilla bean paste
- 2 T beetroot powder

Cooking Instructions
- Heat butter in a large saucepan over medium heat, then add in 80g of the vermicelli, cardamom and cinnamon stick. Cook until golden brown whist continuously stirring.
- Add in the milk and soaked sago and simmer for 35minutes, stirring occasionally to prevent sticking and burning.
- Stir in the condensed milk, rose water and vanilla.
- To make the topping, heat oil in a pan over medium high heat, once hot, fry 80 g vermicelli in batches until puffed, drain on paper towel.
- Dust the puffed vermicelli in beetroot powder.
- Serve the Boeber warm topped with puffed vermicelli and a sprinkle of nuts.
