Traditional Malay samosas

Ingredients
- 10 sheets phyllo pastry
- 1/4 cup cold water
- 700 g cake flour, sifted
- 750 ml sunflower oil
- 1 kg beef mince
- 2 tsp olive oil, to drizzle
- 1/2 large onion, chopped
- 1.5 cm ginger
- 2 Tbsp garam masala
- 2 tsp curry powder
- 1 tsp cumin
- 3 tbsp coriander, ground
- salt and pepper to taste
- a handful fresh mint
- 3 tbls coriander, chopped

Cooking Instructions
- Sauté the chopped onion in a medium pot until softened.
- Add the garlic and ginger and ground spices and cook for 2-3 min.
- Add the mince and cook for 10 min until cooked through and browed.
- Once the filling is cool, place 1 T of filling onto a pastry rectangle and roll as directed below.
- Deep fry in hot oil until golden, about 3 to 5 minutes
