Broccoli soup

Ingredients

  • Cheddar, grated, for serving
  • 100 g Baby spinach leaves
  • pea shoots, fo serving
  • Dijon mustard, to serve
  • 4 baguettes
  • 350 ml organic chicken stock
  • 450 g broccoli, rinsed, cut into small florets and blanched
  • 2 Tbsp olive oil
  • 3 fresh thyme sprigs, leaves only
  • 3 cloves garlic, chopped
  • 2 large onions, chopped

Cooking Instructions

  1. Soften 2 chopped onions, 3 cloves chopped garlic and 3 sprigs thyme in 2 T olive oil.
  2. Add 450 g broccoli and 2 cups chicken stock, season and cook until tender. Blend with 100 g baby spinach leaves.
  3. Spread 1 sliced baguette with Dijon mustard and top with grated Cheddar.
  4. Grill and serve with the soup, garnished with pea shoots.
