Ingredients
- 600g dark chocolate, chopped and melted
- 500g Butter
- 4 Tbsp sugar for the egg whites
- 6 Free-range eggs, beaten
- cocoa powder, for dusting
- 350g flour, sifted
- 3 tsp baking powder
- 250 ml fresh Ayrshire cream

Cooking Instructions
- Preheat the oven to 160°C.
- Melt the chocolate and butter together in a bowl suspended over a saucepan of simmering water – the mixture should have a smooth, glossy consistency (take care not to overheat it).
- Set aside to cool slightly.
- In a mixer, cream together the sugar and eggs, then add the cocoa powder, flour and baking powder.
- Add the chocolate mixture and beat until combined.
- Pour the mixture into a greased 25 x 35 cm baking dish and bake for 50 minutes, or until just set but still slightly undercooked (the chocolate will set further when cooling).
- To make the decoration:
- In a bowl suspended over a saucepan of simmering water, melt the chocolate, then whisk in the cream until smooth.
- Pipe a word of your choice over the brownie and decorate with chocolate dipped cherries.
