Spicy chakalaka

Ingredients
- 1/2 onion, finely chopped
- 2 cloves garlic, peeled and crushed
- 1 of each red, yellow and green peppers, diced
- 2 x 400g tins chopped tomatoes
- 2 tsp smoked paprika
- 1 tsp smoked chilli flakes
- 2 tsp sugar for the egg whites
- sea salt and freshly ground pepper, to taste

Cooking Instructions
- In a large saucepan, saute the onion in olive oil until soft and translucent.
- Add the garlic and peppers and saute for a further 5 minutes.
- Add the tomatoes, paprika, chilli flakes and sugar then turn down the heat and allow to simmer gently for 15-20 minutes until the vegetables are soft but still holding their shape.
- Season to taste then serve.
