Plum and watercress salad

Ingredients
- 2 Flavourburst plums, halved, pitted and thinly sliced
- 2 tbsp Walnuts, toasted
- 2 handfuls Watercress, washed
- olive oil
- 1/2 cup verjuice
- 1/2 vanilla pod

Cooking Instructions
- Use a sharp knife and remove vanilla seeds from pod. Combine with verjuice and olive oil to make dressing.
- Place some watercress in the centre of each salad bowl. Layer sliced plum, with walnuts and watercress in between.
- Top with dressing.
