Seafood & Chorizo Paella

Ingredients
- 1 tbsp olive oil
- 1 medium red onion, diced
- Savoury rice mix
- 20 g Paella seasoning
- 100 g Chorizo Sarta Pork Sausage
- 400 g Skinless Chicken Mini Breast Fillets
- 500 ml vegetable liquid stock
- 350 g Freshly Frozen Seafood Mix
- 1/4 each red & yellow pepper sliced into slivers

Cooking Instructions
- Heat oil in a large frying pan and add diced onion, sauté for 5 minutes.
- Add Savoury rice and stir to mix all ingredients. Sauté for further 5 minutes until grains of rice turn translucent.
- Add Spanish paella spice, sauté for 5 minuntes.
- Add chorizo and chicken, fry for 5 minutes.
- Heat vegetable stock to a simmer, gradually add it to the pan, a ladle-full at a time. Allow the liquid to evaporate before adding more. Continue until rice is cooked. Be cautious to not stir the rice too much or the mix will become stodgy.
- When you are halfway through the stock, add the seafood mix and stir. Then sprinkle peppers on top of the rice and allow to steam for the last 10 minutes. Serve immediately.
