Steamed coffee puddings with truffles

Ingredients

  • 120 g Chocolate
  • 500 g Self raising flour
  • 1 Free-range egg
  • 75 g White sugar
  • 125 ml Black coffee
  • 25 g butter, softened
  • A few drops vanilla extract
  • A pinch of salt
  • 6 Truffles

Cooking Instructions

  1. Melt the chocolate in a double boiler over a low heat or very slowly in a microwave oven, stirring until silky in texture.
  2. Add the remaining ingredients and mix well.
  3. Spoon into 6 demitasse cups.
  4. Cover the base of a large pot with water and bring to a boil.
  5. Place the pudding cups inside.
  6. Cover and steam for 8 to 10 minutes, until the puddings are cooked on top and well puffed, but soft and liquid at the bottom.
  7. Remove from the heat.
  8. Serve immediately with a chocolate truffle on top.
