Maple, coconut and pecan granola

Ingredients
- 1 1/4 cups Raw pecans, coarsley chopped
- 1 cup Raw sunflower seeds
- 1 cup Raw pumpkin seeds
- 2 x 40 g tubs Simply toasted coconut
- 2 tsp salt
- 105 g brown sugar
- 2 tbsp coconut oil, melted
- 2 cups Rolled oats
- 6 Tbsp maple syrup

Cooking Instructions
- Preheat the oven to 180 °C.
- Place the maple syrup, oats, pumpkin seeds, sunflower seeds, pecans, coconut oil, sugar and salt in a large bowl and mix until well combined.
- Spread the granola mixture in an even layer on a baking sheet.
- Bake the granola in the oven for about 45 minutes, stirring every 10 – 15 minutes, until it is toasted.
- Remove the granola from the oven and add the toasted coconut.
- Allow to cool completely before serving or storing in an airtight container. The granola can be stored for up to 1 month.
