Napa Jack's Roasted Chicken

Ingredients

  • 2-3 tbsp Napa jack's Original BBQ Sauce + 1 tbsp for basting
  • 3 Tbsp olive oil, to drizzle
  • ground pepper
  • 6-8 chicken drumsticks, washed and pat dry
  • 1/4 cup ginger ale

Cooking Instructions

  1. Preheat the oven to 300 degrees F (150 degrees Celsius). Have ready an oven baking dish.
  2. Brush the baking dish bottom, sides and top rim with olive oil, and arrange drumsticks on bottom skin-side up.
  3. Season the drumsticks on both sides with Napa Jack’s Poultry Seasoning Rub.
  4. In a small bowl, mix together about 2-3 tbsp Napa Jack’s Original BBQ Sauce with ginger ale, combing well.
  5. Pour BBQ sauce/ginger ale mixture over chicken drumsticks and make sure all sides are coated in the mixture.
  6. Place the uncovered baking dish with drumsticks into the preheated oven.
  7. Roast for 15 minutes, and then baste with BBQ sauce and return to oven.
  8. Repeat basting every 15 minutes until chicken drumsticks are done.
  9. For the last time, when the chicken is done, re-baste, and return to the oven under the broiler to crisp up, with the temperature dial turned to broil. With the oven door ajar, broil the drumsticks for 2-4 minutes.
  10. Remove from the oven and serve.
