Spicy Citrus Calamari Rings

Cook's Tips: | Adjust the heat levels to your taste. Smoked chilli flakes are pretty hot though, so use caution. You can also pan fry the rings in some olive oil and add the reduced sauce halfway through, grilling just uses less oil. |

Ingredients
- 2 orange juice
- 1 orange zest
- 2 tsp ground ginger
- 1/4 Tbsp cinnamon, for sprinkling
- 1 tsp cumin
- 2 cups white sugar
- 2 tsp paprika
- 1 tsp white pepper, freshly ground
- 1 tsp smoked chilli flakes
- 1 Tbsp sweet chilli sauce
- 1 x 100 ml Hoisin sauce
- 1 Tbsp garlic flakes
- 4 medium tubes of calamari, cut into rings
- salt to taste

Cooking Instructions
- Turn on the grill element of your oven so it can heat up while we get ready.
- Add the orange juice, zest and the rest of the ingredients for the sauce into a pan on medium heat and reduce by about 50%, whisking every now and then.
- Cut the calamari into rings, rinse in cool water and place in a colander. Let the excess water drain away, pat the rings dry with some paper towels and then pop them into a mixing bowl.
- Once the sauce has reduced, pour half of it over the calamari rings and mix it through. Set aside the remainder of the sauce.
- Place the marinated calamari rings on a baking tray and put under the grill element of your oven, as close as you can go to the element while still being able to see the rings. After 4-5 minutes toss the rings, turning them over and grill for another 4-5 minutes. You don't really want to cook them longer than that or they'll go rubbery. Keep an eye on them at all times as they can easily burn at such high heat.
- You may notice that as the calamari cooks, it will release some water that can make the sauce "melt" off the rings. Do not fear, this is why we set some of the sauce aside! When cooked, remove from the baking tray and coat the rings with the remainder of the sauce that you have brought up to medium heat again.
- Season with salt and pepper and sprinkle with paprika for some more colour.
