Spicy grilled chicken salad

Ingredients
- 2 tsp smoked crushed chillies
- 2 chicken breasts, boneless, skinless and cut into strips
- 2 tbsp lime juice
- extra virgin olive oil, plus extra for drizzling
- sea salt and freshly ground pepper, to taste
- 6 cups Ripe watermelon, cubed
- 100 g chevin goat's cheese
- fresh wild rocket
- vegetable sprouts, to garnish
- lime wedges, for serving
- organic olive oil, for drizzling

Cooking Instructions
- Pre-heat a griddle pan over high heat.
- Combine the paprika, cayenne pepper, lemon juice, olive oil and salt and pepper and brush over the chicken.
- Grill the chicken until golden brown on both sides and cooked through, Remove from the pan and allow to rest for 5-10 minutes.
- Place the wild rocket on a large plate then top with the watermelon, goat’s cheese and sprouts. Slice the chicken and place on the salad.
- Dress with lime juice and olive oil and serve.
