Beef Kofta with tzatziki and pita breads

Ingredients
- 500 g Beef Mince
- 2, grated and all moisture pressed out Mediterranean cucumber, halved and sliced diagonally
- 1/2 cup onion, finely chopped
- 6 Tbsp fresh parsley,finely chopped
- 1 tsp dried thyme
- 1/2 tsp dried oregano
- 2 cups double cream Ayrshire yoghurt
- 2 garlic cloves, peeled
- 1/2 lemon, zested, plus extra for squeezing
- sea salt and freshly ground pepper, to taste
- warm pita breads
- kebab skewers

- To make the kofta, combine the mince, 1 onion, 2 garlic cloves, parsley, dried thyme, dried oregano, sea salt and black pepper in a bowl and mix well.
- Shape into ovals and gently spike onto the soaked bamboo skewers.
- Heat a griddle pan over high heat then grill the kofta until cooked through.
- To make the tzatziki, combine the cucumbers, yoghurt, 1 garlic clove, lemon juice sea salt and black pepper and mix well.
- Serve the cooked kofta with tzatziki and toasted pita breads.
