Leek and cheese phyllo pies

Cook's Tips:This may seem like a lot of filling but it shrinks down as it cooks. This recipe makes 12 medium sized pies, but can be made smaller for a party snack.

Ingredients

  • 3 Tbsp Extra virgin olive oil
  • 750ml leeks, trimmed and washed, finely chopped
  • 1 shallot, or half a small white onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 litre brown mushrooms, chopped into 1/2 to 1cm cubes
  • 75g butter, plus 50 to 80g of melted butter to brush the pastry
  • fennel or dill leaves, finely chopped
  • 1/3 cup flat leaf parsley, finely chopped
  • 60ml fresh Ayrshire cream
  • 70 g parmesan, grated
  • 1.5 g pepper
  • salt
  • 6 sheets phyllo pastry

Cooking Instructions

  1. Pre-heat the oven to 180oC.
  2. Make the filling by heating the olive oil in a large frying pan, and add 1 Tbsp of butter. Fry the leeks and shallot until they soften (about 5 minutes).
  3. Add the mushrooms, garlic and 60g of butter, and cook for about 5 minutes until all the water has evaporated.  
  4. Add the herbs and cream and carry on cooking until the mixture thickens again.
  5. Add the Parmesan cheese and turn off the heat, allowing the cheese to melt into the mixture which should be fairly thick. Add salt and pepper, test for taste and adjust if necessary. Allow the mix to cool slightly, making it easier to handle.
  6. Working fairly quickly unroll 2 sheets of phyllo pastry. Flip one half of the phyllo sheet back and brush the entire surface with the melted butter. Fold the top phyllo sheet back over the buttered surface and repeat with the other half of the sheet.
  7. Place the sheet lengthways, with the narrower edge at the bottom, and cut the sheet in half down the centre, and each half into half again. You now have 4 long strips. Spoon a dessert spoon of the mix into the bottom corner of the strip and roll it up into triangles. Brush the tops lightly with the melted butter and arrange on a lined baking tray.
  8. Bake for 20 minutes until golden brown.
