Green beans with a maple dressing

Ingredients
- 350 g Fine green beans, tops and tails trimmed
- 50 g toasted flaked almonds
- 100 g Pomegranate rubies
- 4 tsp fresh ginger, grated
- 5 Tbsp maple syrup
- 2/3 cups lemon, juiced
- 125 ml coconut milk

Cooking Instructions
- For the dressing, put all the ingredients into a small saucepan over a medium heat. Simmer for 1 – 2 minutes until the dressing has a creamy consistency. Set aside.
- Steam the green beans for 5 – 6 minutes or until tender. Drain and set aside.
- Place the beans into a serving dish and drizzle with the coconut and maple dressing.
- To serve, sprinkle the toasted almonds and pomegranate seeds over the beans.
