Roasted squash, avo and feta salad

Ingredients
- maldon salt and pepper, to taste
- 5 tbsp extra virgin olive oil
- 1/3 cup red wine vinegar
- honey
- 2 tbsp fresh mint leaves, chopped
- 200 g Lambs lettuce, baby butter & watercress salad mix
- 50 g roasted and salted almonds, chopped
- 200 g feta, cubed
- 2 avocado, peeled and sliced
- salt and pepper
- 110 g butter, melted
- 1 x 800 g bag roasting squash medley

Cooking Instructions
- Preheat the oven to 180°C.
- Place the squash onto a baking tray, drizzle with the melted butter and season with salt and black pepper. Roast for 30 minutes until the vegetables are soft.
- To make the dressing, combine all the ingredients, season and mix well.
- Lightly toss the roasted squash, avocado, almonds and feta with the salad greens.
- Drizzle over the dressing and serve immediately with warm ciabatta.
