Roasted squash, avo and feta salad

Ingredients

  • maldon salt and pepper, to taste
  • 5 tbsp extra virgin olive oil
  • 1/3 cup red wine vinegar
  • honey
  • 2 tbsp fresh mint leaves, chopped
  • 200 g Lambs lettuce, baby butter & watercress salad mix
  • 50 g roasted and salted almonds, chopped
  • 200 g feta, cubed
  • 2 avocado, peeled and sliced
  • salt and pepper
  • 110 g butter, melted
  • 1 x 800 g bag roasting squash medley

Cooking Instructions

  1. Preheat the oven to 180°C.
  2. Place the squash onto a baking tray, drizzle with the melted butter and season with salt and black pepper. Roast for 30 minutes until the vegetables are soft.
  3. To make the dressing, combine all the ingredients, season and mix well.
  4. Lightly toss the roasted squash, avocado, almonds and feta with the salad greens.
  5. Drizzle over the dressing and serve immediately with warm ciabatta.
