Bean, corn & spinach quesidillas

Ingredients
- 6 soft flour tortillas
- 250 g mozzarella, grated
- 4 whole, grilled corncobs
- 1 x 400 g tin red kidney beans
- 100 g baby spinach
- 1 jar chunky salsa

Cooking Instructions
- Heat a large non-stick pan/griddle pan over high heat.
- Place one wrap in the pan then top with a third of all the ingredients (cheese, corn, beans and spinach).
- Allow to grill and for the cheese to melt then very carefully flip it over and allow to toast for another few minutes until both sides are golden brown.
- Carefully remove the filled wraps from the pan then continue with the remaining ingredients.
- When you are ready to serve, slice the quesidillas into wedges and serve with the chunky salsa.
