Ingredients
- ghee
- 4 grated carrots
- 125 g dessicated coconut
- ½ tsp cardamom powder
- 1 tin condensed milk
- 200 g 70% dark chocolate

Cooking Instructions
- Melt 1 T ghee in a pan over a low heat. Add 4 grated carrots, 125 g desiccated coconut, ½ t cardamom powder and 1 can condensed milk. Cook until sticky, about 20 minutes.
- Melt 200 g 70% dark chocolate. Pour 1 T chocolate into each cavity of a silicone cupcake tray, then top each with 3 T carrot mixture and another 1 T melted dark chocolate. Chill to set.
