Bircher's muesli

Ingredients
- 1 tbsp maple syrup
- 200 g fresh raspberries
- 100g dried fruit and nuts of your choice
- 250ml apple juice
- 300ml full cream milk
- 60 g Rolled oats
- 100 g pecan nuts, toasted and roughly chopped
- fresh fruit such as figs, plums, berries or peaches, to garnish
- A pinch salt

Cooking Instructions
- Combine the oats, salt, milk and apple juice in a large bowl
- Cover with cling wrap and place in the fridge overnight to soak
- When you are ready to serve, stir in the nuts and dried fruit and serve with fresh fruit
To make raspberry compote:
- In a pan, add 120g raspberries, 2 Tbsp water and 1 Tbsp agave or maple syrup
- Allow to simmer for 7 minutes or until desired thickness
