Maple syrup-roasted carrots

Ingredients

  • 6 carrots, peeled and quartered lengthways
  • 30 ml maple syrup, for drizzling
  • 1/4 Tbsp cinnamon, for sprinkling
  • 50g butter, softened
  • 3 medium-sized potatoes, sliced and steamed
  • 2 Tbsp dried chilli flakes(optional)
  • 1 tsp smoked paprika
  • olive oil, to drizzle
  • 8 pork bangers

Cooking Instructions

  1. Pre-heat the oven to 180°C.
  2. Peel the carrots and quarter them lengthways. Toss them in a mixture of the maple syrup, cinnamon, melted butter, brown sugar and a sprinkling of sea salt.
  3. Roast on a baking tray for 40 minutes, turning occasionally, until soft.
  4. Cut the potatoes into wedges, then toss them with the chilli flakes, smoked paprika and a drizzle of olive oil.
  5. Roast, on a separate baking tray, alongside the carrots.
  6. Serve with the pork bangers, fried in olive oil until golden.
