Maple syrup-roasted carrots

Ingredients
- 6 carrots, peeled and quartered lengthways
- 30 ml maple syrup, for drizzling
- 1/4 Tbsp cinnamon, for sprinkling
- 50g butter, softened
- 3 medium-sized potatoes, sliced and steamed
- 2 Tbsp dried chilli flakes(optional)
- 1 tsp smoked paprika
- olive oil, to drizzle
- 8 pork bangers

Cooking Instructions
- Pre-heat the oven to 180°C.
- Peel the carrots and quarter them lengthways. Toss them in a mixture of the maple syrup, cinnamon, melted butter, brown sugar and a sprinkling of sea salt.
- Roast on a baking tray for 40 minutes, turning occasionally, until soft.
- Cut the potatoes into wedges, then toss them with the chilli flakes, smoked paprika and a drizzle of olive oil.
- Roast, on a separate baking tray, alongside the carrots.
- Serve with the pork bangers, fried in olive oil until golden.
