Ultimate roast turkey

Serves:6-8

Ingredients

  • 1x 3.5-4kg turkey, giblets removed
  • 30 g fresh sage, chopped
  • 100g packet dried cranberries
  • 1 tub fig glaze
  • 200 ml Port

Cooking Instructions

  1. Use the melted butter and a brush and paint the sage leaves onto the turkey. Season with salt and freshly cracked black pepper.
  2. Cook turkey according to pack instructions.
  3. Remove turkey from roasting pan and use a large spoon to scoop the top layer of oil off. Pour the pan juices through a strainer and into a small saucepan. Simmer to reduce a little and add the cranberries and fig glaze. 
  4. Reduce heat and simmer to a thick consistency, but do not burn. Remove from heat and add port. Stir trough and spoon over the turkey and keep some to serve on the side.
