Cajun pumpkin and grape salad (copy)

Ingredients
- 1 small pumpkin, skinned and cut into slices
- 3 tbsp extra virgin olive oil
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 2 tsp cayenne pepper
- salt and freshly ground black pepper
- woolworths white grapes, halved
- 1/2 small brocoli, cut into small pieces
- 100 g almonds toasted, roughly chopped
- 1 tbsp pumpkin seeds
- 1 tbsp sesame seeds
- 1 lemon, zested and juiced
- 4 tbsp parsley, roughly chopped
- 4 tbsp plain yoghurt

Cooking Instructions
- Arrange the pumpkin wedges on a roasting tray
- Coat with olive oil, paprika, cumin, coriander, cayenne pepper, salt and black pepper
- Roast in the oven for 35 – 40 minutes until tender and charred
- Halve the grapes and place in a salad bowl
- Cut the broccoli into small pieces and add to the grapes
- Add toasted almonds, pumpkin seeds, sesame seeds and chopped parsley
- Add the juice and zest of one lemon
- Spoon in the yoghurt
- Season to taste
- Stir the salad to combine
