This spicy, green chilli and cilantro sauce hails from Yemen but has become wildly popular in Israel and Middle Eastern cuisine. It gives dishes a huge burst of flavour and can be thought of as the Middle Eastern version of chimichurri sauce or salsa verde

HOW TO USE

• Use in dishes for spicy freshness.
• Mix with yoghurt as a dressing or dip, or brush on roasted lamb or aubergines.
• Stir into dishes at the end of cooking to maintain its fresh flavour.
