Our India inspired Rogan Josh spice blend is a savoury and intense blend of spices with fennel. The Rogan Josh is a fiery curry of Kashmiri origin, traditionally cooked for weary travellers in the chilly Himalayan climate. It is known for its bold red colour and spicy sauce.

RECIPE SUGGESTION

Rogan Josh

• Ingredients: 45 ml oil, 3 tbsp spice, 300 g lamb cubes, bone-in or off, 1 tin tomato paste, 750 ml beef or veg stock (Woolworths liquid concentrate stick diluted as per pack) or water, 1 tbsp Woolworths double cream yoghurt, 1 tbsp fresh coriander, chopped (optional), sugar and salt to season .
• Method: Heat the oil in a medium-sized pot and fry the spice and lamb for 10 minutes on medium heat stirring occasionally. Add 1 tbsp of water if sticking to loosen. Add the tomato paste and cook for 2 minutes. Add the stock and simmer gently on low heat for 45 minutes with the lid half on. Stir occasionally to prevent the curry from catching. Stir through the yoghurt and coriander, if using, season with sugar and salt.
